Polish Pleśniak (Three-Layer Cocoa Cake) – a true childhood classic! 🇵🇱😍 (For a ~24×24 cm pan) Crust: 3 cups flour, 3 tbsp sugar, 3 tbsp cocoa powder, 3 egg yolks, 200 g cold butter, 2 tsp baking powder, 2 tbsp sour cream (18%) Filling: 3 egg whites + 1 cup sugar (beaten until stiff peaks), tangy currant jam (or any sour jam) Extra magic: top it with grated Polish mleczna czekolada (creamy milk chocolate) right after baking while it’s still warm – it melts into pure heaven! 🥹🖤 How to: Quickly knead the dough, divide into 3 parts. Freeze two, bake one as a dry base (~15 min at 180°C). Spread jam on the baked base, top with stiff meringue, then grate the remaining raw dough on top. Bake 40–45 min at 180°C. When it comes out hot, shower it with grated Polish milk chocolate. Cool, cut, and try not to eat the whole thing in one go! 🔥
