I think your framing of the question is right: hooks may be the wrong design pattern for most builders looking to launch ERC20 tokens.
The primary benefit of launching an ERC20 token is that markets are open and permissionless by default.
Establishing a status quo where builders need to rely on a Swap API like 0x to manually add support is unacceptable and defeats the entire purpose of launching a token / market onchain.
