What are some up and coming RWA projects we're excited to follow? Something with real use case that improves an existing asset class, not just fomo or smoke and mirrors

Not necessarily on Ethereum (L2 may make more sense) but any asset that relies on or benefits from accurate, reliable tracking. Like government property, wine for connoisseurs that desire supply chain info, or even tracking carbon compensation. Areas that benefit from transparency and currently lack it
