Understanding FHE as if you were talking about it over coffee:
FHE (Fully Homomorphic Encryption) sounds complicated, I know.
But think about it this way: You're sitting in a café with your coffee. You want the waiter to add sugar to your coffee without giving them your password. The waiter adds the sugar but never learns your password.
FHE works exactly like that; the data remains encrypted, operations are performed, but no one can see the content.  
Both privacy and functionality.
