Mochi: 100g mochi powder | 1g salt | 35g water | 40g egg liquid | 20g butter | 2g butterfly pea pollen
Lemon pudding: 2 egg yolks | 22g caster sugar | 150g milk | 5g lemon zest | 75g whipping cream | 4g gelatine sheets
1️⃣Mix mochi powder & salt & butterfly pea pollen evenly ➕ water & egg liquid
2️⃣ Stir until no dry powder is visible. Transfer to the countertop ➕ Knead the softened butter until smooth
3️⃣ Divide into 7 portions, roll into balls, place on a baking sheet, spray water on the surface and bake in the oven at 170 degrees for about 35 minutes
🍋Pudding
1️⃣ Beat the egg yolks ➕ Beat the sugar with a whisk until pale
2️⃣Step 1️⃣At the same time, boil the milk and lemon zest in a milk pot, cook until it boils slightly at the edge of the pot, pour into step 1️⃣, stir continuously while pouring, and sieve
3️⃣ Stir evenly and return the milk to the pot, and cook until it reaches 82 degrees (you need to keep stirring during the cooking process to prevent clumping)
