I would use Tabelog (Japanese yelp) and try to find restaurants for the cuisine you want that has rating >3.8
Japanese known to be notoriously hard reviewers so anything above
>3.5 = good
>3.8 = pretty good
>4 = amazing
>4.2 = god tier
