That said, I think there are ways to mitigate right now: camera + microphone both on, is the person engaged or looking away? If away, are their eyes doing the left-right reading movement? Can you hear keyboard clacks?

you cannot really now. some of these tools are really good. many people are very native to screens and it's hard to tell as well.

two things i've changed:

1. bet on younger/local talent
2. once enough signal, bring them on n for full day onsite interviews like good ole days
