I'm suggesting that keto (/low carb diets) is actually more about avoiding processed and ultra processed carbs - pasta, breads etc. Which have low nutritional value and also cause glucose spiking.
Keto / low carb diets still have carbs in them, it's just that they are more likely to come from unprocessed foods - vegetables and fruits. The Okinawa diet promotes vegetable intake, but small amounts of rice and noodles, and so they do have similarities.
Also, all carbs are not equal. Glucose can spike with a fresh cooked potato, but chill it and then reheat and the glocuose spike is much much smaller.
