Instructions
Prepare the Fish:
Rinse cá mai under cold water. Remove heads, tails, and entrails. Fillet by splitting along the belly and removing the spine. Rinse again and pat dry.
Place fillets in a bowl, squeeze juice from 2–3 lemons over them (enough to cover), and mix gently for 2 minutes until the fish turns opaque white. Drain and squeeze out excess juice.
Marinate the Fish:
In a bowl, mix 2 tbsp sugar, 1 tbsp minced garlic, 1–2 minced chilies, and 1 tbsp fish sauce. Toss with the fish and let sit for 5 minutes.
Make Simple Dipping Sauce:
Mix 2 tbsp fish sauce, 1 tbsp lemon juice, 1 tbsp sugar, 1 tsp minced chili, and 2 tbsp water. Stir until sugar dissolves. Add 1 tbsp crushed peanuts for texture.
Assemble the Dish:
Mix marinated fish with sliced cucumber, herbs, and a sprinkle of crushed peanuts.
Serve with rice paper for wrapping or as a salad. Dip in the sauce.

Freshness is key: Use cá mai caught the same day for safety and flavor.
