chicken soup.
not sure i ever had a bad one.
tips on upgrading a regular batch of soup (2 versions: no budget & budget)
tip 1: use 2 chickens or 1 chicken w/ extra backs and wings you can get from the butcher
side note: (take the breast meat out earlier if you’re planning on eating it so it’s too dry, also do this if you want clean stock)
important: salt the water in the beginning but hold off on the seasonings til the end
stacking the soup to build the flavor: most soup veggies are fine but carrots & onions are a must, 1 lb per bird
onions are the foundation, carrots are the middle rung down to earth veg and
chicken is the depth.
tip 2: make your own noodles, raw is best for adding thickness
raw noodles (flour egg salt) add starch into the soup making it thicker
these tips (with or without the notes) will add a silkier soup broth
i’d like to explore with the broth but ngl it’s not cheap on cost or time so that ideas chilling on the shelf
