Feels like this sort of feature will get better as more app developers have devices that support it. People tend to pay attention more to novel features when they can experience the pain and joy around them daily.

Agreed. Also hoping Apple refines the UI further and offers a developer API to give some general indication to users about what is Double Tappable.
