We have to communicate our design decisions in a small window of time, the UPs help articulate things more efficiently than 2 minutes of how we did A|B test and gathered results.
Yeah, the templates can feel fugayzi at times but it's how you use the tool. The problem is that, designers getting their education from google ux course and youtube are all copying the same templates.
Not many are teaching how to remix, and use the tool creatively.
