Alpha-gal syndrome (AGS), the severe allergy to meat, meat products, dairy, etc., is now estimated to be the 10th most common food allergy in the US! This is going to absolutely transform the landscape of vegan food and “meatless” products/flavors over the next 5 years. AGS incidence proportion up over 5,500% !! looking at rates from ‘15-‘20 - ‘21-‘25. It’s primarily borne here by the lone star tick, which is spreading range rapidly across NA due to the warming climate.
