Approve allows a spender to access your tokens by setting an allowance, requiring a separate transaction. Permit uses a signature to authorize spending without a transaction, saving gas. Approve risks higher exposure if the spender is malicious, as it persists until revoked. Permit is safer with one-time use and no on-chain state.
