Beef & pork stew, slow-cooked (2h) with Finnish porter and herbs (thyme & bay leaf). Finns would know this as Karjalan paisti, but my version has much maltier taste due to the beer - make sure you choose one that is not very hoped, traditional porters are best, mixed in 1:1 proportion with beef stock.
