A Tale of Two Oranges:
Orange pith—the white, spongy layer between the peel and fruit—is safe to eat, highly nutritious, and packed with fiber, vitamin C, and bioflavonoids that support immune health and reduce inflammation.
Orange 1: Purchased from farmers market, extremely “pithy” but unfathomable sweet.
Orange 2: Purchased from grocery store, almost no pith but not sweet.
It seems like in our race to chase the perfect orange with GMOs, we lost the plot. Orange 1 tastes better and coincidentally is healthier; it just looks a little fucked up.
A obsession with perfection in both design and progress can ruin the initial product.
