Sup Brenebon from Eastern Indonesia. The name "Brenebon" is actually a local Eastern Indoneska pronunciation of the Dutch words "Bruine Bonen," which literally means "Brown Beans" (kidney beans). It is a fascinating dish that perfectly blends local Indonesian flavors with Dutch colonial history. In the Netherlands, Bruine Bonensoep is a thick, hearty winter soup. Adopted by Eastern Indonesian it was infused with rich Indonesian spices like nutmeg, cloves, and pepper, transforming it into the aromatic soup. Traditionally, this is made with pig's trotters (kaki babi) or pork ribs. The collagen from the trotters makes the soup incredibly thick and savory.
