ALMOND CAKE Ingredients - 2 1/4 cups (285g) all-purpose flour - 1 cup (200g) granulated sugar - 3 large eggs, at room temperature - 2 teaspoons baking powder - 1 teaspoon salt - 1 cup (120g) sliced almonds - 1/2 cup (115g) unsalted butter, softened - 2 teaspoons almond extract - 1 cup (240ml) whole milk, at room temperature Instructions 1. Preheat the oven to 350°F (180°C). Grease two 8-inch (20cm) round cake pans. 2. In a medium bowl, whisk together flour, sugar, baking powder, and salt. 3. In a large bowl, whisk together eggs, sliced almonds, and almond extract. 4. Add the softened butter to the egg mixture and whisk until smooth. 5. Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with dry ingredients. Beat just until combined. 6. Divide the batter evenly between the prepared pans. 7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. 8. Remove from the oven and let cool in the pans for 5 minutes before transferring.
