Hiroshige's fan print from Edo, where the thing on this plate was invented. Pressed by hand, eaten immediately, barely two hundred years old.
Its ancestor, narezushi, took a year and a half. Mackerel was salted, buried in rice bran for a year, then washed, and then packed in rice again, fermented for weeks more. Nobody bought it for a quick lunch, it was a New Year's offering to the gods, started the previous year. Sushi began as a Shinto ritual food.
Hiroshige's plate is what happened when the waiting was removed. The antiquity is in the year and a half.
