Greek Salad
Cucumbers: 2, diced
Cherry tomatoes: 2 cups, halved
Red onion: 1/4 cup, thinly sliced
Kalamata olives: 1/2 cup
Feta cheese: 1/2 cup, crumbled
Fresh oregano: 2 tablespoons, chopped
Red wine vinegar: 3 tablespoons
Extra virgin olive oil: 3 tablespoons
Salt and pepper: to taste
Instructions:
Combine cucumbers, cherry tomatoes, red onion, Kalamata olives, feta cheese, and oregano in a bowl. Drizzle with red wine vinegar and olive oil. Season with salt and pepper, toss gently, and serve chilled.
