Update: after further thought I think I'm going to try Obsidian for this purpose, since I'm already familiar with the basics and it's free for personal use.
If that doesn't suit me, I'll consider other ways to use Paragraph.
Still interested in hearing what others use for this though, so feel free to chime in.
