I wrote a long tweet about why Spinach “isn’t the worst leafy green”.
So much nutritional context gets stripped away by modern diet and agriculture.
All the chenopods (beets, chard, spinach) can feature high oxalates. Often best consumed cooked and paired with dairy.
Also big fan of beef and pastured proteins, less folks get confused that I only stan veggies.
