For our take on a classic, we found boiling the potatoes washed out their flavor and left the casserole thin, while roasting took too long. Simmering them in butter and cream gave us the best of both worlds—deep, concentrated flavor and a perfectly smooth texture. A small amount of cream cheese added richness and helped balance the sweetness.
