Cookie Dough 227 grams salted butter browned 300 grams (1 1/2 cup) light brown sugar 2 large eggs 2 Tbsp espresso powder 1 Tbsp vanilla bean paste 240 + 30 grams all-purpose flour 26 grams dutch-processed cocoa powder 1 Tbsp baking powder . Filling 5-6 lady fingers 1/2 cup espresso . Frosting 227 grams (1 small tub) mascarpone, cold 120 grams (1 cup) powdered sugar 1/2 Tbsp vanilla bean paste 180 mL (3/4 cup) heavy whipping cream .
