I learned two things recently: (1) I can enter a broken system with `nixos-enter` from a live USB environment and (2) I really should be mounting disks by UUID/label otherwise adding/removing disks can render the system unbootable 😅 https://nixos.wiki/wiki/Change_root#Using_nixos-enter
