Are you tilting it enough though? I just started a few weeks go and recently found that once I started tilting more than 45° it helps create that thin top that will help create the ear.
Keep seeing lemon+blueberry recipes being pushed to me on YT. So, proofing some dough rn to give it a go. Most recent sourdough attempt is my 4th loaf I've made so far. 100% hydration starter, white bread flour.
