Before refrigeration, how did vegetables, fruit, etc., stay good during winter for consumption? Every year the women in my family canned. They ‘put up’ the fruit as jelly and jam, apricots, peaches, apple butter. Today we still see these products in jars. Green beans, peas, carrots, corn, tomatoes etc were canned. All of this was labeled and placed in the upper reaches of a cupboard, a pantry, a basement, which was the best place, because the temperature and humidity were steady.
